Banana Bread
You will need:
- 1 cup Sugar
- 1/2 cup Sour cream
- 2 large Eggs
- 3 medium Bananas, very ripe
- 2 cups Flour
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder Vegetable cooking spray
- 1/2 cup Walnuts (optional)
METHOD:
- Preheat the oven to 350 degrees.
- Blend sugar and sour cream together in a large bowl with an electric mixer. Add eggs to sugar mixture.
- Peel and slice bananas. Mash them with a fork. Add to mixture in bowl and mix well.
- In a small bowl, stir together flour, baking soda, and baking powder.
- Add half the flour mixture to the banana mixture. With a large spoon, stir until all the flour is wet.
- Add the rest of the flour mixture and blend again until flour is wet to make the banana bread batter. (If adding nuts, stir them in now.)
- Spray a 9 by 5–inch loaf pan with vegetable cooking spray.
- Pour the batter into the loaf pan and put it in the oven. Bake for 1 hour. To test doneness, insert a toothpick in the center of the bread. If it comes out clean, the bread is done.
- Cool the bread at least 30 minutes before slicing.
